While we were in AZ, I tried a new cupcake. I had to. . . I found lemon curd at Trader Joes, and it just BEGGED me to created a cupcake for it. I decided on white cake with lemon zest, lemon curd filling, and citrus cream cheese frosting. And the tartness was the perfect balance to the sweet frosting. . .
I have decided to call it "Lemon Dream" because, frankly, it was dreamy. I hate that things like lemon curd have to be refrigerated! I want to make filled cupcakes more often!

Please don't judge the decorating job. I was far from home without my tools, so I had to improvise and pipe the frosting with a ziploc bag. . . but what they lacked in beauty, they made up for in taste.

I like the look of the wider curls of piped frosting. And the idea of lemon curd - it makes my mouth happy.

We have a Trader Joes and you know what, I'm probably never going to make this cupcake because I'm lazy. I see your stuff and tell myself that I'm going to try getting creative with cupcakes, but I don't. I'm so focused on improving my cooking that baking has taken a back seat.
I saw that a new cupcake shop (The Sweet Tooth Fairy) is in P-town. I have to try it when I come into town Sept. 18-20th. I'm worried. Does that seem disloyal to you? Or truly, is it your daily haunt?

I got hungry just looking at it...I want to hire you to make cupcakes for a soiree I'm having....Not sure when I'm having this soiree but I am. And I would love to have your cupcakes there...Just sayin'
